This is a great recipe if you’re looking to wow in minimal time. Guests will think you’ve spent hours slaving away over the stove creating this delicious chutney when in fact, we know that it’s really just minutes before you can enjoy this great apple, plum and bacon chutney with cheese, bread, cold meats, crackers…whatever takes your fancy. Oh, it’s gluten free too!
Start by grilling the bacon. Line the grill sheet with aluminium foil and lay the rashers of spoiltpig bacon on the sheet allowing a fair amount of space between each rasher for it to crisp nicely. Turn over after 4 mins and cook for a further 4-5mins until well crisped up. Remove from the grill and place on a plate covered with kitchen paper and leave to cool.
Place all the remaining ingredients in a non stick pan and cook gently for 10mins over a low heat until it has reached a syrupy consistency. Take off the heat and pour the chutney into a bowl.
Crumble the crisped spoiltpig bacon into the bowl and stir into the chutney before serving. This is great with a strong mature cheddar, on bread with some sliced gammon, as an accompanying chutney with pate or even just solo with crackers.
