If you’re really pressed for time, or even if not, then this gluten free recipe is a must for you. Our warm spinach and spoiltpig bacon salad is surprisingly filling and absolutely packed with flavour. Yum.
In a large bowl, mix together the spinach leaves, chilli, shallot, olive oil and lemon juice ensuring the leaves are well coated.
Fry the chopped spoiltpig bacon over a hot heat and cook until crispy and golden (approx. 3 minutes). Remove from the pan and put on a plate lined with kitchen paper to drain. Then add the bacon to the spinach leaf mix and stir in with the sesame seeds.
You have 2 options when serving – if you want to be ‘proper’ then find a nice plate and arrange the salad just so before consuming. Alternatively, save on washing up and those few extra seconds of time and eat direct from the bowl. Either way, this is a tasty gluten free luncheon or speedy supper you will want more of!
