Brussel Sprouts with Bacon and Chestnuts
Perfect for the festive season, but equally good with any Sunday Roast – the ideal way to get the kids to eat their sprouts!
What you'll need:
- 1lb brussels sprouts
- 2 packs of spoiltpig Dry Cured Smoked Back Bacon 184g
- 20-25 roasted chestnuts (canned or vacuum packed), roughly chopped
- 500ml chicken stock
- Salt and pepper to taste
How to prepare:
Boil a large pot of salty water. Whilst it’s boiling, cut the sprouts in half and then slice them thinly. Cut the spoiltpig bacon into batons and then sauté them in a large pan over a medium heat.
Once the water is boiling, add the sprouts and boil for 2 minutes. Then get a bowl of iced water ready and transfer the sprouts from the boiling water to the iced water. This stops them cooking and maintains the vibrant green. Drain in a colander.
Once the bacon is cooked, turn up the heat and add the chestnuts and sprouts and sauté for a few minutes before adding the chicken stock. Season with salt and pepper and cook on a high heat for about 3-4 minutes. Serve hot.
