Bacon, Broccoli & Blue Cheese Patties
These individual bacon and cheese patties are perfect for picnics…and the large pie makes a great dinner. We couldn’t work out which one we preferred, so we made both! The recipe is enough for 12 patties and 2 pies or half of each! Recipe courtesy of Amy Sheppard Food.
What you'll need:
- 6 rashers of smoked streaky bacon cut into 1-2cm pieces
- Oil for frying
- A small head of broccoli. Florets cut into 1-2cm pieces
- 1 leek finely sliced
- 100g stilton crumbled
- 275ml milk
- Ground black pepper
- 2 sheets of ready rolled puff pastry
- 1 egg beaten
How to prepare:
Place the bacon and a drizzle of oil in a large pan. Fry on a medium heat for 3 minutes. Set the bacon aside.
Place the broccoli and leek in the pan with the hot bacon oil and fry for 8-10 minutes until the leeks are soft and the broccoli is beginning to soften.
Stir in the bacon, blue cheese, milk and ground black pepper, until the cheese has melted. Leave the mixture to completely cool.
Heat the oven to 180C. Take the pastry from the fridge 30 minutes before you need it.
Lay the first sheet of pastry on a lightly floured worktop.
Cut out 6 circles, roughly 9-10cm across from the pastry and place them on a lined baking tray.
Place a dessert spoon of filling in the centre of each circle, leaving a 1cm gap all the way around.
Brush beaten egg around the gap. Roll out the remaining pastry to the same thickness as the bases and cut out 6 more circles.
Lay the circles over the filling and use a fork to press down firmly around the sides to join the top and the bottom together.
Make a small hole in the centre of the patties and brush with the beaten egg.
There will be enough filling and pastry left to make 6 more patties or 1 large pie and then bake for 20-25 minutes
