What you'll need:
- 350g fresh pasta
- 250g Dry Cured Unsmoked Back Bacon, chopped into small chunks 1 tablespoon extra virgin olive oil
- 50g fresh parmesan, grated
- 3 egg yolks
- 100ml double cream
- Salt and pepper
- 1 tablespoon fresh parsley, chopped
How to prepare:
Heat the oil in a frying pan and cook the bacon until crisp. Remove from the pan and drain on some kitchen roll.
Mix the egg yolks, parmesan and cream in a bowl and season with salt and pepper. Cook the pasta as per the pack instructions in a large pan of salty boiling water. When cooked, drain the pasta and add it to the sauce, stirring it until it is fully coated. Add the bacon and mix it in. Serve with a garnish of parsley and some extra parmesan.
