Feeds 4-6
Peel the potatoes and cut them into medium sized pieces. Place in a large saucepan. Cover in cold salted water and bring to the boil. Simmer until tender enough to mash.
In the meantime, heat a little oil in a large, deep non-stick frying pan. Add the bacon and fry for 3 minutes. Stir in the cabbage and leek and fry on a low to medium heat for 10 minutes until soft.
Drain the potatoes and mash until smooth. Season with salt and pepper.
Add the milk and butter to the potato and stir until combined.
Stir in the cabbage, leek and bacon until evenly spread.
