Bacon and Chicken Skewers with Basil Chimichurri Sauce

What you'll need:
- 2 chicken breasts, diced
- 6 slices smoked streaky spoiltpig bacon
- 6 wooden skewers soaked in water for 15 mins
- Olive oil to brush
- 30g (1oz) basil
- 30g (1oz) flat leaf parsley, chopped
- 30g (1oz) red onion, roughly chopped
- 1 garlic clove, roughly chopped
- 125ml (1/2 cup) olive oil
- 3 tbsp red wine vinegar
- 2 tbsp lemon juice
- 2 tsp dried oregano
- 1/2 tsp salt
How to prepare:
Make the basil chimichurri sauce:
Add all the ingredients into the food processor and whiz into a saucy consistency.
Taste and add more vinegar or salt as necessary and set aside.
Make the bacon chicken skewers:
Thread the chicken cubes unto the skewers weaving the bacon slices between each cube. Continue until all the skewers are full and brush with oil and season.
Cook the chicken bacon skewers on the barbecue for approximately 10 minutes, turning regularly, or until they are cooked through.
Serve the chicken and bacon skewers, with the basil chimichurri sauce and plenty of grilled vegetables.
